Nel 1294 i monaci agostiniani fondarono un convento vicino Monaco di Baviera, diventato nei secoli un simbolo della città. Dal 1328 iniziarono a produrre birra, tradizione che continuò fino al 1803, quando Napoleone sciolse gli ordini monastici e il birrificio fu privatizzato. Nel 1829 Anton Wagner ne acquisì la proprietà, e nel 1885 il figlio Joseph trasferì la produzione in una nuova struttura, ancora oggi attiva. La birreria è rimasta legata alla famiglia Wagner fino a tempi recenti, ed è oggi gestita da una fondazione che ne tutela tradizione e qualità. La produzione segue metodi tradizionali, con materie prime selezionate e una malteria propria nel cuore di Monaco. Tutto nel rispetto del Reinheitsgebot, la storica legge tedesca sulla purezza della birra, simbolo di autenticità e rigore produttivo, che constata che per garantire la qualità della birra, essa potesse essere prodotta solo con tre ingredienti: acqua, orzo/malto e luppolo. La Augustiner Edelstoff, in particolare, presenta un profilo pulito, un livello basso di fermentazione, e una equilibrata dolcezza di malto.

(In 1294, Augustinian monks founded a monastery near Munich, which over the centuries became a symbol of the city. From 1328, they began brewing beer, a tradition that continued until 1803, when Napoleon dissolved the monastic orders and the brewery was privatised. In 1829, Anton Wagner acquired the property, and in 1885 his son Joseph moved production to a new facility, which is still in operation today. The brewery remained in the Wagner family until recently and is now managed by a foundation that safeguards its tradition and quality. Production follows traditional methods, using selected raw materials and the brewery’s own malt house in the heart of Munich. All in compliance with the Reinheitsgebot, the historic German beer purity law, a symbol of authenticity and rigorous production standards, which stipulates that to guarantee the quality of beer, it may only be produced using three ingredients: water, barley/malt and hops. Augustiner Edelstoff, in particular, has a clean profile, a low level of fermentation, and a balanced malt sweetness.)

Situato in Boemia, nel cuore della tradizione brassicola ceca, questo birrificio affonda le sue radici nella storia della città di Nymburk. L’impianto moderno nasce nel 1895 e la prima produzione risale al 1898. Oggi è un birrificio indipendente, fedele alle tecniche tradizionali e alla qualità delle materie prime locali. La sua Pilsener è prodotta con doppia decozione e pregiato luppolo Saaz, simbolo dell’eccellenza boema, e famoso per il suo aroma delicato, erbaceo, floreale e speziato. Una birra dorata, equilibrata e scorrevole, ottenuta da acqua pura, malto d’orzo e lunghi tempi di fermentazione e maturazione. Il risultato è una Czech Pils autentica, elegante e profondamente territoriale, caratterizzata da un sapore erbaceo e un livello di amarezza maggiore rispetto a una classica Helles bavarese.

(Located in Bohemia, at the heart of the Czech brewing tradition, this brewery has its roots in the history of the town of Nymburk. The modern brewery was established in 1895, with production commencing in 1898. Today it is an independent brewery, faithful to traditional techniques and the quality of local raw materials. Its Pilsner is brewed using a double decoction method and premium Saaz hops, a symbol of Bohemian excellence and renowned for its delicate, herbaceous, floral and spicy aroma. A golden, balanced and smooth beer, made from pure water, barley malt and long fermentation and maturation periods. The result is an authentic, elegant and deeply regional Czech Pils, characterised by a herbaceous flavour and a higher level of bitterness than a classic Bavarian Helles.)

Prodotta a Ingolstadt, nel cuore della Baviera, la Herrnbräu Weissbier rappresenta la tradizione autentica delle birre di frumento tedesche. Il birrificio affonda le sue radici nel XVI secolo, in un territorio simbolo della cultura brassicola europea. Si tratta di una Weissbier ad alta fermentazione, non filtrata, realizzata nel rispetto del Reinheitsgebot. La Weissbier di Herrnbräu nasce nel rispetto di questa tradizione, utilizzando solo malto d’orzo, malto di frumento, luppolo, lievito e acqua, in linea con i dettami della legge bavarese sulla purezza. La presenza di lieviti in sospensione le conferisce il tipico aspetto torbido e una schiuma ricca e cremosa. Al naso emergono note di banana matura e chiodi di garofano, con leggere sfumature agrumate. Morbida, fresca e poco amara: una birra equilibrata, pensata per essere bevuta con facilità.

(Produced in Ingolstadt, in the heart of Bavaria, Herrnbräu Weissbier embodies the authentic tradition of German wheat beers. The brewery traces its roots back to the 16th century, in a region that epitomises European brewing culture. It is a top-fermented, unfiltered Weissbier, brewed in accordance with the Reinheitsgebot. Herrnbräu’s Weissbier is brewed in keeping with this tradition, using only barley malt, wheat malt, hops, yeast and water, in accordance with the Bavarian Purity Law. The presence of suspended yeast gives it its characteristic cloudy appearance and a rich, creamy head. The nose reveals notes of ripe banana and cloves, with subtle citrus undertones. Smooth, fresh and slightly bitter: a well-balanced beer, designed to be enjoyed with ease.)

Nata come birra italiana da meditazione, Brass è pensata per accompagnare momenti lenti, ispirata ai climi e alle atmosfere di alta quota. Una birra strutturata ma equilibrata, che punta su pulizia, secchezza e bevibilità senza eccessi. Realizzata con materie prime selezionate, tra cui grano Senatore Cappelli coltivato in proprio, esprime un carattere autentico e distintivo. Non filtrata, si presenta con un colore tra il dorato e l’ambrato e una schiuma fine e compatta. Al palato emergono note di arancia candita, frutta matura e leggere tostature. Potente ma elegante, si chiude con un finale asciutto e armonico.

(Created as an Italian ‘meditation’ beer, Brass is designed to accompany moments of quiet reflection, inspired by the climate and atmosphere of high altitudes. A structured yet balanced beer, it focuses on purity, dryness and drinkability without excess. Made with selected ingredients, including our own home-grown Senatore Cappelli wheat, it expresses an authentic and distinctive character. Unfiltered, it has a colour ranging from golden to amber and a fine, compact head. On the palate, notes of candied orange, ripe fruit and light toasty notes emerge. Powerful yet elegant, it finishes with a dry and harmonious aftertaste.)

St. Bernardus Prior 8

Nata dalla tradizione monastica belga, St. Bernardus affonda le sue radici nella storica collaborazione con i monaci di Westvleteren, attiva fino al 1992. In seguito alla politica anticlericale attuata all’inizio del Diciannovesimo secolo, la Carlsberg Abbey Community, situata nella Francia del nord, decise di spostarsi a Watou, un piccolo villaggio belga a pochi chilometri di distanza. Qui i monaci trasformarono una fattoria nel “Refuge Notre Dame de St. Bernard”, producendo formaggi d’abbazia come attività principale. Vicino alla fabbrica di formaggio venne costruita una nuova birreria e Deconick iniziò a produrre le birre Sixtus con l’aiuto del mastro birraio di Westvleteren, il quale portò con sé saggezza, conoscenza, e ricette originali. Oggi è uno dei principali riferimenti tra le birre d’abbazia belghe, riconosciuto per qualità e autenticità. Difatti, è stata nominata “Migliore birra Dubbel scura in stile belga al mondo” ai World Beer Awards. La produzione segue ancora processi tradizionali, con alta fermentazione e grande attenzione alle materie prime. Si tratta di una Belgian Dubbel, scura e strutturata, non filtrata. Maltata e fruttata, con note di caramello e frutta secca, è una birra morbida, equilibrata e da gustare con calma.

(St. Bernardus, born out of the Belgian monastic tradition, has its roots in the historic collaboration with the monks of Westvleteren, which continued until 1992. Following the anti-clerical policies implemented at the beginning of the 19th century, the Carlsberg Abbey Community, based in northern France, decided to relocate to Watou, a small Belgian village just a few kilometres away. Here, the monks transformed a farm into the “Refuge Notre Dame de St. Bernard”, with the production of abbey cheeses as their main activity. A new brewery was built next to the cheese factory, and Deconick began producing Sixtus beers with the help of the Westvleteren master brewer, who brought with him wisdom, knowledge and original recipes. Today, it is one of the leading names among Belgian abbey beers, recognised for its quality and authenticity. Indeed, it was named “World’s Best Belgian-Style Dark Dubbel” at the World Beer Awards. Production still follows traditional methods, with top-fermentation and great attention to raw materials. It is a Belgian Dubbel, dark and full-bodied, unfiltered. Malty and fruity, with notes of caramel and dried fruit, it is a smooth, balanced beer to be savoured at leisure.)

Da allora rappresenta uno dei simboli più iconici della tradizione brassicola belga. La ricetta originale combina frumento non maltato, malto d’orzo e luppolo, arricchiti da scorza d’arancia e coriandolo. Un equilibrio unico che nasce da secoli di sperimentazione e tradizione. Si tratta di una Blanche/Witbier, non filtrata, chiara e naturalmente torbida. Fresca, agrumata e leggermente speziata, è una birra leggera, morbida e incredibilmente rinfrescante, perfetta per ogni momento.

Le birre Rochefort sono riconosciute dal marchio “Authentic Trappist Product”, garanzia di origine, qualità e rispetto delle regole monastiche. Realizzate con acqua pura della sorgente Tridaine e lieviti selezionati internamente, esprimono un profilo ricco e complesso. Si tratta di una Tripel ad alta fermentazione, non filtrata, dal colore dorato e dal corpo strutturato, caratterizzata da note di pera, mela e agrumi matura. Intensa ma equilibrata, rappresenta una delle espressioni più iconiche della tradizione brassicola belga.
